3/4 cup AE Mr. E's Garden Vegetable Cottage Cheese
1 tablespoon ketchup
1 hard boiled egg, chopped
1 tablespoon thinly sliced green onion
1 tablespoon pickle relish
1/2 teaspoon salt
1 1/2 cups chopped cooked chicken
lettuce leaves
2 tablespoons toasted sliced almonds |
For dressing, in a blender combine AE Mr. E's Garden Vegetable Cottage Cheese and ketchup. Cover and blend. In a mixing bowl stir together cottage cheese mixture, egg, onion, pickle relish and salt. Add in chicken and toss gently to mix. Cover and chill for 4-24 hours. To serve, divide among 4 lettuce-lined salad plates. Garnish with almonds. |
